Egg-eatarian: Omelet Curry
Quite a lot of people say they are veggies, but still eat eggs. My message to all of them, EGGS ARE NON-VEG! If you ha not eaten them, they would have produced nice little chicks (which would also be eaten anyway). Do not tell me that eggs-are-a-product thing. They are non-veg and you know it.
Having said that, here is a nice recipe that I have learnt from my mother. Many Bengali household has this as a dish, not often though. I would name this as 'Omelet Curry'.

Ingredients:
- Eggs: 4
- Onions: 2 large, one finely chopped, another sliced.
- Green Chillies: 3 finely chopped
- Cummin seeds: 1/2 teaspoon
- Dry Red Chilli: 1
- Bay Leaves: 3
- Coriandar Powder: 1 tablespoon, soaked in little water
- Turmeric powder: 1/2 teaspoon, soaked with coriander powder
- Ginger Garlic paste: 1 teaspoon
- 2 Capsicums: 1, medium sliced
- 2 Tomatoes: chopped
- Oil: 4 tablespoon
- Water: 2 cups
- Salt: to taste
Procedure:
- Beat one egg at a time. Add some salt, few chopped onions and green chilli. Fry with 1 teaspoon oil. When one side is half done, fold like a roll.
- Cut each omelet into four pieces. Try not to eat them.
- Put the remaining oil on heat. Add cummin seeds, red chilli and bay leaves. Fry till done.
- Add the remaining green chillies and sliced onions.
- Fry till onions are golden, then add the ginger garlic paste.
- Fry till the raw smell goes.
- Add the sliced capsicums and fry them, add some salt to speed up the process.
- Add the turmeric and coriander paste. Fry till the water vanishes and nice smell of fried corriander comes.
- Add the tomatoes and fry.
- Now, add the water and let boil.
- Gently lower in the omelet pieces into the boiling gravy and boil for sometime.
- The curry is ready.
