Recipe: Kachkolar Khosa Bhorta

Again the same kanchkola (raw banana). This one is different, it is with the skin of the banana (Khosa in bengali), which we usually throw away as waste. When prepared well, skins of all vegetables taste great and you know that the skins contain the most vitamins and minerals. This is actually in continuation of the previous recipe, where we de-skinned the boiled raw bananas and use the banana in the kofta. A dish can be made with the skin also.
Ingredients:
· Kanchkola-r khosa (raw banana skin) : boiled
· 2 teaspoon oil (more depending on the amount of khosa)
· some mustard seeds
· salt and turmeic powder
· 1 tablespoon mustard paste (soak the mustard seeds for 3-4 hours and then drain and grind with some water)
· 1 green chili: sliced
Procedure:
· Mash the boiled skins in a grinder. If you are doing by hand, don't worry, anyway it will taste good.
· Heat the oil in a pan.
· When hot, put the mustard seeds to splutter, then add the green chilis.
· Now add the mashed skins in the pan and mix well.
· Lower the heat and cook by tuirning frequently, otherwise it will stick at the base.
· Cook till the mixture is fried well and starts giving a nice smell.
· Now add the mustard paste and cook for 2-3 minutes by mixing the paste thoroughly.
The dish is ready. Very easy to cook (if you can make the kofta, this comes free). Delicious with hot plain rice.
